《武夷山志》乾隆十六年1751年记载：“茶产不一，唯武夷为最，他产性寒，此独温也。其品分岩茶、洲茶。附山为岩，沿溪为洲，岩为上品，洲为次之”。武夷肉桂茶是产于山岩的岩茶，为乌龙茶的上品，品质特点为：味甘泽而香馥郁，没绿茶之苦，无红茶之涩，性和不寒，久藏不坏，香久益清，味久益醇。
清代蒋衡的《茶歌》，对肉桂茶的独特品质特征有很高的评价，指香极辛锐，具有强烈的刺激感。
